My new Nigerian friends offer a recipe

I am currently helping a very kind Nigerian elderly couple where the husband is suffering with cancer and comes from Lagos. His wife was telling me about Nigerian food and next time I pick them up for cancer treatment she is going to give me a recipe for a Nigerian dish.
I find them very friendly and glad that I can share my time with them.
I would love to surprise them with a dish ( not too complicated )that I can make, what do you recommend?

Let's keep it simple just as your requested. You can make them a dish of fried ripe plantain and omelette. Yes. Omelette is commonly eaten in Africa every day from our free range chicken eggs.
Another alternative could be boiled yam (you boil it like potatoes until tender and nice) and vegetable sauce or stew.
