Chicken in Groundnut Sauce

The first time I had chicken in groundnut sauce was 30 years ago when I attended college in Philadelphia. The chef at my school was from Nigeria. She would this as an appetizers during art gallery openings. I would find out when the gallery would have there exhibits so I would make sure I was there. Most of the openings were on Friday nights first of the month. It was the best taste I ever had. The chicken with the sauce made of peanut butter, ginger, tomatoes and ground shrimp was so amazing to me. It was my first time ever having any type of African food. It made me want to learn more about this type of cooking. A few years later I started collecting both West and East African recipes. Today I cook African food often and I love it!
